I need your Pumpkin Pie

I love pumpkin.
And I love anything made with it.

When I worked full-time and October rolled around, my lunch break often consisted of a Pumpkin Smash smoothie from Jamba Juice (and cookie to go along).

Now that I’m at stay at home mom, when I get a hankering for those nutmeg spices I just bake a pie!
Sometimes I make pumpkin pie in the summer.
Sometimes I eat a slice at midnight right before bed. (I guess midnight would be two hours before bed.)

When I’m feeling health conscious I make it without crust and use non-fat milk…
…so I can feel better about spreading all sorts of cool whip on top.
In my opinion (having grown up in middle-class suburbia in the 80s) cool whip tastes better on pumpkin pie than real whipping cream. I know, I know, you’re all shaking your heads in disgust. But that’s just how it was in our house and that’s just how I like it now. And while we’re on the topic, the ratio of pie to cool whip should be evenly spread. That picture above really needs another dollop.

But my pumpkin love doesn’t stop with pie.
I love pumpkin cake (my college roommates made this yummy one with yellow cake mix for the crust).
I love pumpkin cookies, with cream cheese frosting on top please! And I love pumpkin bread. In fact, my mom has a yummy pumpkin-chocolate swirl bread recipe I should share with you all. Mmmm. I’ve got two cans of pumpkin sitting on my shelf waiting to be used!
Yes. I love pumpkin.
And that’s why I need your help.

I’ve been collecting pumpkin recipes over the years from Gourmet and Cooking Light (back when I had actually had time to read magazines). All sorts of pumpkin pie twists…..Gingersnap Crust, Cinnamon Streusel topping, Pumpkin Pound Cake with Buttermilk Glaze…

But I’d like to know if YOU have a favorite pumpkin pie recipe that you love (or any type of pumpkin recipe, but mostly pie). I usually just stick with the standard recipe on the back of the can. And I’m ready to branch out. I’ve got those two cans just waiting to be used up!
